A Different, Improved Mi Quang

Mi Quang or Quang noodles is rice noodle soup that originated and is famous in the central province of Quang Nam. It is made up of thin, flat rice noodles glazed with a mixture of peanut oil fried with onion; peanuts and rice crackers; and a yellow broth. But while the traditional main ingredients are shrimp are pork which are used to cook the broth and as topping, through time and experimentation, it has developed additional toppings such as chicken, fish, squid, snails, and even frogs. One diner is especially famous for its Mi Quang chicken version.

 

Mi ga Tu Chau (Tu Chau's chicken noodles) Restaurant in Quang Nam established its name in the food business because of its chicken Mi Quang. This is evident in its being in service for 25 years selling the famous recipe. The diner is owned by Chau who uses rooster with spur meat.

 

Her recipe stands out from the other Mi Quang sellers in that she doesn't season the meat with onion and turmeric. According to her, rooster meat is good even with common seasoning like garlic, pepper powder and green onions. The secret is balance between the seasoning and the meat, that the seasoning is absorbed well into the meat. The rooster meat is cut into medium-sized pieces to prevent from falling apart while simmering. After seasoning the dish, the chicken is simmered in hot peanut oil until it becomes tender, fragrant and fatty.

 

While its chicken Mi Quang is already a winner, Mi ga Tu Chau Restaurant stands out from the other diners even more with its home-made noodles. More than 106 kilograms of noodles are made and served to customers at the restaurant everyday. Moreover, while the other varieties serve Mi Quang with many kinds of vegetables, Chau's recipe is served only with knotgrass and shredded banana flower. The dish is finished off with rice cracker, green chili, and lime pieces as toppings.

 

Chicken Mi Quang at Chau's restaurant is so good that a single order is sometimes not enough. Some, if not many, customers order an additional bowl of its famous recipe at Mi Ky Ly, the other name Mi ga Tu Chau Restaurant is known for because of the T-section where it is located. But whatever name one may give the diner, people will always flock to the place because of its famously delicious chicken Mi Quang.
